Who the published copy is written by
The published copy is written into the target space by the app itself, not by the person publishing. That means ordinary authors need no permission in the target space at all.
The page shows who published it like this:
Manual publishes: "Published by <name>".
Approval publishes: "Published via Approval".
System publishes: the name "Capable".
To read and rewrite restricted source pages, the app adds its own app user to the source page's restrictions when a publish runs. It adds itself again whenever restrictions are edited on a page in a publish-enabled space.

#Worth knowing
There is no unpublish or delete action. "Clear state" only breaks the link between the source and published page, changing the target space only clears records, and Reset to default leaves every published page in place. To remove a published copy, delete it by hand in the target space.
